M1435 – The 8th Issue

Titled “The Time of the Land,” the issue considers winter as a period of rest, protection and preparation. At Fonterutoli, olives are harvested by hand and processed in the estate mill with temperature control, oxygen-free crushing and immediate filtration to preserve aroma, freshness and phenolic compounds. The issue also addresses high-altitude viticulture, the Chianti Ultra Trail scheduled for 20–22 March 2026 and the 2023 season at Siepi, where a wet spring and dry summer required careful vineyard work.
