Vineyard and terroir
The grapes grow at 100–300 metres above sea level, mainly on clay-limestone soils. They are harvested by hand at optimal ripeness.
Vinification
Fermentation is spontaneous, with 7 days of skin maceration. 20% of the grapes are fermented as whole bunches.
Ageing
The wine ages for six months in steel tanks and fibreglass vessels. It is bottled without filtration, fining or added sulfur dioxide.
