Vineyard and terroir
The grapes are harvested from 50-year-old vines.
Vinification
The bunches are harvested in early October, carefully transported to the winery and pressed. Fermentation takes place on the skins for two weeks.
Ageing
The wine rests in cement tanks with added yeast for 12 months, followed by a further six months in bottle.
