Vineyard and terroir
The grapes come from vines aged 15–20 years.
Vinification
The bunches are harvested carefully and placed in cold-storage chambers before being pressed and crushed while still chilled. Fermentation in contact with the skins at 10 °C contributes aromatic complexity. Each variety is vinified separately in stainless-steel tanks at temperatures no higher than 18 °C, and the resulting wines are then blended.
Ageing
The finished blend rests in bottle for four months.

Label / history
Capsula Viola was created in 1980 after the Italian government prohibited white grape varieties in Chianti blends, leaving quantities of white grapes without a use. Its name means “Purple Capsule” in Italian and refers to the multicoloured slate soils typical of the Chianti area.
