Vinification
The grapes are harvested by hand in September and October as each variety ripens. Sangiovese, Syrah and Merlot are vinified separately so that fermentation and maceration can be adapted to each variety, bringing out aromas and softening the tannins. Fermentation is kept below 25 °C, with gentle pump-overs, followed by malolactic fermentation.
Ageing
Part of the wine matures in barriques, while the remainder rests in stainless-steel tanks. Bottling takes place in the autumn following the harvest.
Tasting profile
Aromatic and well balanced, with the three varieties contributing distinct yet harmonious aromas and flavours. The tannins are soft.
