Vineyard and terroir
The grapes grow on sunny Tuscan slopes. Bright, sunny days and shifts between daytime and nighttime temperatures help the grapes keep lively acidity, which shapes the balance between acidity and fruit.
Grapes
Selected Sangiovese grapes. After harvest they are divided into two groups: one is gently pressed to give pale juice, the other macerates for several hours to draw more aroma from the skins.
Vinification
The juice is cooled to 10 °C for natural clarification. Fermentation takes place in stainless steel tanks at a low temperature, no higher than 15 °C, to preserve clean, fresh aromas.
Ageing
The wine ages in the same stainless steel tanks at 10 °C, to retain its full range of aromatic nuances.
Tasting profile
Fresh and vibrant, with light fruitiness and crisp freshness. Lively acidity gives a refreshing character and a clean finish. The short skin maceration gives a rich aromatic profile and good structure.
Serving and pairing
Best in spring and summer.
Label / history
Made at the Santa Cristina winery on the outskirts of the ancient town of Cortona, built in 2006 and equipped with modern technology.
