Grapes
The blend is Grechetto, Procanico and Viognier. Each variety is vinified separately, as it ripens and arrives at the winery.
Vinification
The grapes are destemmed and gently pressed, and the must is chilled to 10 °C so that it clarifies naturally while the delicate aromatic compounds that shape the wine's character are preserved. Fermentation takes place in stainless-steel tanks at no more than 17 °C, which retains the distinct qualities of each variety and brings out a fresh, fruity profile. After fermentation the wine stays in the same tanks at around 10 °C, which stabilizes its aromas and balance and keeps its characteristic lightness and elegance.
Label / history
Santa Cristina Bianco joined the Classic range in 2009, as did Santa Cristina Rosato. It is made at the Santa Cristina winery, on the outskirts of the ancient town of Cortona. The winery was built in 2006 and is equipped with the state-of-the-art technology used to make Antinori wines.
