Vinification

Harvest in 2025 began in mid-August with Pinot Grigio. Pinot Bianco followed from the end of August into early September, and Vermentino, the last to ripen, was picked in early to mid-September. After destemming, the grapes were gently pressed. The must was chilled to 10 °C for natural clarification and, two days later, transferred to stainless-steel tanks. Alcoholic fermentation took place at no more than 17 °C to preserve the aromas of each variety.

Ageing

The wine was aged in steel tanks at a controlled temperature of 10 °C. Bottling began in January 2026.

Tasting profile

An elegant, dry white with an inviting bouquet and a refreshing, refined style.

Serving and pairing

Ready to drink now. It pairs well with fish and seafood dishes.

Vintage notes

2025: a mild winter followed by a fairly dry, hot summer.

Label / history

Niccolò Antinori first produced the wine in 1931. Both the label and the winemaking philosophy have remained largely unchanged since then. The aim is to express the character of the wine's terroir as fully as possible. It is one of the Antinori family winery's historic wines.
