Vineyard and terroir
The fruit comes from the “Fossa di Lupo” vineyard in Cerasuolo di Vittoria, at 270–280 m above sea level. Cool breezes reach the site, while summer nights have lower temperatures. The vineyard is farmed organically, without chemicals or pesticides.
Vinification
The grapes are harvested by hand, sorted, destemmed and pressed. Spontaneous fermentation takes place in large barrels, with 30 days of skin contact.
Ageing
The wine matures for 32 months in large Slavonian oak barrels, followed by at least four months in bottle.
