Vineyard and terroir
The fruit is grown on the slopes of Mount Etna. Vineyards on the volcano range from 350 to 1,050 metres above sea level, and the grape’s character varies markedly according to the side of the mountain and vineyard practices. The vines used for this wine are around 60 years old on average. Benanti follows environmentally responsible principles and places particular emphasis on vineyard work.
Vinification
The grapes are harvested during the second ten-day period of October. Fermentation and maceration on the skins are traditionally long.
Ageing
The wine matures for at least 12 months in 225-litre oak barrels.
