Vinification
The grapes are harvested shortly before full ripeness to retain acidity. Only the first-press juice is used. Fermentation takes place at a controlled temperature to produce the base wine, followed by a second fermentation in autoclaves to create the bubbles.
Label / history
Abele Bolla founded the small winery in Veneto in 1883. Its wines won a gold medal at a competition in Bologna in 1909. The release of its first Amarone vintage in 1950 preceded its expansion abroad. In the late 1960s, Brown-Forman acquired a 40% stake and began distributing Bolla wines in the United States.
