Vinification
Fermentation follows a method based on millstones. In Salento in ancient times, low, wide stone vessels were used, giving the must greater contact with the skins and letting oxygen dissolve more readily during fermentation. Modern winemakers revived the technique by recreating the millstones in stainless steel, keeping their traditional shape and properties. The method draws as much flavour and aroma as possible from the grapes and makes the tannins riper and softer without losing their stability.
Ageing
The wine never touches oak. It is aged in steel vats until bottling, which preserves the purity of the grape varieties and the clarity of its style.
Tasting profile
Powerful, ripe tannins combine with elegance and depth. The wine joins the strength and character of three southern Italian varieties.
