Vineyard and terroir
The fruit comes from vineyards in Abruzzo.
Vinification
The range is certified organic, biodynamic and vegan. After harvest, the grapes are traditionally vinified at a controlled temperature in steel tanks. Fermentation relies on natural yeast derived from pollen collected in L’Alta Quota, Maiella’s high-altitude area, where conditions include very low temperatures, frozen ground, strong winds, snow and intense solar radiation. The pollen comes from soldanella and adonis; for the 2022 vintage, service tree was also selected. No sulfites are added.
