Vineyard and terroir
The Pinot Grigio is grown in vineyards in Abruzzo.
Vinification
The grapes undergo a one-month fermentation on their skins in stainless-steel vats at a controlled 12–14 °C. Natural yeast derived from pollen collected in the Il Ghiaione area is used, with no added sulfites. The pollen selection includes dried Spinosa and pale Cymbalaria; for the 2022 vintage, service tree pollen was also included.
Ageing
After bottling, the wine rests briefly in bottle.
