Vineyard and terroir
The grapes grow on hillside sites in southern Tuscany, mainly around Montalcino. The soils are well-drained limestone with stony and clay elements. The good drainage limits water retention in the soil, and the hills keep a balance between the warmth of the sun and freshness.
Vinification
Only free-run juice, obtained without pressing, is used for fermentation, which gives a cleaner, more delicate taste. Fermentation takes place in stainless steel tanks at 13–15 °C, which preserves the volatile aromas and emphasizes the crisp acidity.
Ageing
The wine spends around two months on the fine lees in stainless steel tanks, which rounds out the texture and adds a little more body. Early bottling keeps it youthful and bright.
Tasting profile
Light, fresh and expressive, with lively acidity. The aromas are floral and fruity, with a subtle mineral character. The palate is fruity and aromatic, with fresh acidity and a light mineral note.
Serving and pairing
Suited to a summer aperitif, a light lunch or Italian food.
Label / history
The name "Le Rime" refers to the lines left by water on the vineyard slopes, like the marks of a receding tide on sand.
