Grapes
A single grape variety is selected according to the performance of each vintage: either the estate’s best Merlot or Cabernet Sauvignon. The variety chosen for the latest published vintage, 2021, is not identified.
Vinification
The grapes are hand-picked. The must remains in contact with the skins for 24 hours at 12°C before spontaneous alcoholic fermentation. Daily punch-downs and selected délestage operations encourage the extraction of desirable compounds. Maceration lasts approximately 21 days.
Ageing
Malolactic fermentation occurs naturally in French oak barrels, where the wine subsequently matures for 16 months. Release follows an extended, unspecified period of bottle maturation.
Tasting profile
A powerful wine marked by high intensity, structure, body and complexity. Its character emphasizes the qualities of the variety selected for that vintage while retaining balance.
Vintage notes
The 2021 season was substantially below average in volume. April frost and summer heat and drought reduced yields, especially among younger vines, although September brought sunshine, useful day–night temperature variation, gentle rain and ventilation. The resulting fruit was healthy and balanced in alcohol and acidity.
In 2017, April frost was followed by high temperatures and drought. Disease pressure was negligible, the grapes were healthy and higher in potential alcohol than during the preceding five years, and the harvest began 18–21 days early.
