Vineyard and terroir
The fruit comes from vines rooted in deep limestone and clay soils containing traces of silica. Salento’s sunny Mediterranean climate is moderated by steady sea breezes.
Vinification
The grapes are harvested early in the morning, taken directly to the winery and pressed. Fermentation takes place in temperature-controlled stainless-steel vats, with maceration for approximately 10–12 days, followed by malolactic fermentation.
Ageing
The wine rests in steel tanks after malolactic fermentation.
Label / history
The name honours the Corybantes, mythical attendants of the Greek goddess Cybele. They were believed to be the sons of Thalia, muse of light poetry, and Apollo. Their rituals featured ecstatic rhythmic dancing and stirring music, and they were credited with inventing the tambourine. Salento’s Taranta dance is considered a local counterpart to these rituals.
