Vineyard and terroir
The fruit comes from vineyards in the Salice Salentino area, planted on deep soils composed of limestone, clay and silica. Puglia has abundant sunshine, while the nearby Mediterranean Sea brings constant cooling breezes; this climate gives the grapes finesse and balanced fruit character.
Vinification
The grapes are harvested early in the morning, taken directly to the winery and pressed. Alcoholic fermentation lasts 10 days in stainless-steel tanks, followed by malolactic fermentation.
Ageing
Part of the wine matures for six months in French oak barrels, while the remainder stays in stainless-steel tanks.
