Vineyard and terroir
The Negroamaro grapes grow in Salento, Puglia, on fairly dry soils containing limestone, clay and silica. The region receives abundant sunshine, moderated by constant cooling breezes from the nearby Mediterranean Sea. This climate gives the grapes finesse and balanced fruit character.
Vinification
The grapes are harvested early in the morning to prevent premature oxidation from the sun and heat, then taken directly to the estate’s cellars and gently pressed. Fermentation takes place at a controlled temperature, accompanied by ten days of maceration, followed by malolactic fermentation.
Ageing
The wine rests in steel tanks until June 2016.
