Vineyard and terroir
The grapes grow in dry clay soils containing limestone, with an average yield of 70 quintals per hectare. Puglia has abundant sunshine, while the nearby Mediterranean Sea brings constant cooling breezes. This climate gives the grapes finesse and balanced fruit character.
Vinification
The grapes are harvested by hand at dawn, before 09:00, while the air is still cool. Maceration lasts two weeks under controlled temperatures.
Ageing
Part of the wine matures for six months in French oak barrels; the remainder is kept in stainless-steel tanks.
Tasting profile
Ripe fruit notes are accompanied by a gentle texture.
