Vineyard and terroir

The grapes grow in deep, dry soils composed of carbonate, clay and silica. Salento’s sunny climate is moderated by steady sea breezes from the nearby Mediterranean Sea, supporting finesse and balanced fruit character.

Grapes

Negroamaro forms the majority of the blend, with a small proportion of Malvasia Nera di Lecce.

Vinification

The grapes are harvested by hand in the early morning in mid-September, taken directly to the winery and gently pressed. The varieties are vinified separately in temperature-controlled stainless-steel tanks. Fermentation is followed by ten days of maceration with daily pumping over. After malolactic fermentation, the wines are blended.

Ageing

The blend remains in stainless-steel tanks until June.
