Vinification
Made from an organic base wine using the traditional method, with the second fermentation taking place in bottle.
Ageing
A minimum of 12 months in bottle in the cellars. It is described as a medium-aged Brut Nature and the youngest, freshest cava in the range.
Tasting profile
Straw yellow with a fine, lively bubble. The subtle yet expressive nose combines light maturation notes with white flowers, green apple and pear. Light, fruity and citrus-led on the palate, it is dry and balanced, with a long, persistent finish.
Serving and pairing
Pair with appetisers, salads, light canapés or seafood. Store upright below 20 °C and protected from light.
Label / history
Cuvée 1887 commemorates the Hill family, who founded the winery in 1887 during the height of the Modernist movement. Cavas Hill is presented as one of the oldest wineries in the D.O. Cava.
