Vinification
Brief contact between the skins and must gives the cava its distinctive rosé colour. Production then follows the traditional method, including a second fermentation in the bottle.
Ageing
The current product description specifies at least nine months of ageing. The 2025 catalogue instead describes the wine as aged for 12 months.

Tasting profile
Bright, attractive pale raspberry red. Delicate aromas of ripe strawberries and raspberries are joined by a subtle mature note that adds complexity. The palate is fruity, ripe and well structured, with lively acidity in the catalogue description. Fine, well-integrated and refreshing bubbles accentuate its freshness and elegance. The finish is balanced and very pleasant. The catalogue additionally characterises the texture as enveloping and smooth, with a gentle, aromatic opening.
Serving and pairing
Suitable for informal appetisers such as fresh-cheese boards, fruit skewers and light tapas. It can also accompany sushi, fish tacos, fresh salads, vegetable or burrata pizzas, red-fruit desserts and cheesecake. Store the bottle upright, protected from light and draughts, at no more than 20 °C.
Label / history
The Cuvée 1887 line honours the Hill family, who founded the winery in 1887 during the flourishing of the Modernist movement. Cavas Hill is described as one of the oldest wineries in the D.O. Cava.
