Vineyard and terroir
The grapes are grown in the province of Verona.
Vinification
The grapes are harvested at the end of September and laid in a single layer in special crates to dry for about 20 days. This short drying gives the wine greater aromatic intensity and excellent structure. The wine macerates on the skins for about 15 days before fermentation in steel tanks, where malolactic fermentation also takes place.
Ageing
A short period of bottle ageing follows, after which the wine is ready to drink.
Tasting profile
Semi-dry. Elegant and balanced in style and substance, with its elements brought together by carefully judged drying time and the right level of concentration.
Label / history
The name combines the English word "Just" with the Italian "Giusto."
