The fruit comes from rocky hillside vineyards.
Grapes
The published specifications conflict on variety: Nebbiolo and Chardonnay are both identified for this wine.
Vinification
The wine undergoes two fermentations. The first takes place in stainless-steel tanks immediately after harvest; the second occurs in bottle according to the classic method. The grapes are harvested by hand from mid-August, deliberately early in the season.
Ageing
Approximately 12 months of maturation on the lees in bottle produces a creamy mousse and fine, persistent bubbles.
Tasting profile
Straw yellow with green reflections, a creamy foam and fine, persistent perlage. The bouquet is fine and elegant, with complex fresh-fruit notes. The palate is balanced and well structured, combining pronounced sapidity with fresh-almond and spice aromas.
Serving and pairing
Serve at 4–6°C. Its range extends from appetizers to dessert, with particularly suitable pairings including shellfish, caviar, raw fish, white meats and fine cured meats.

Created to commemorate the first anniversary of Dimora Dosio, the wine celebrates hospitality in its various forms.
