Vinification
The grapes are harvested in late September and macerated in horizontal rotary fermenters.
Ageing
The young wine matures for four months in French oak barriques, followed by a short period in bottle.
Vintage notes
The 2021 season in Puglia was dry, with yields 5% lower than the previous year. Parts of Salento suffered significant hail damage in July and August, although the grapes ripened on schedule.
Label / history
The wine takes its name from the Canonico area of Cellino San Marco, where one of Due Palme’s warehouses now stands. In the early twentieth century, the land belonged to Ettamiano, grandfather of the company’s current president.
