Vineyard and terroir
The grapes are grown in Sicily in vineyards following sustainable farming practices. Cantine Ermes cultivates more than 6,000 hectares across the provinces of Trapani, Agrigento and Palermo, encompassing varied microclimates and geologically diverse soils.
Vinification
The grapes are harvested when ripeness and acidity reach the desired balance. Traditional white-wine vinification is followed by controlled-temperature fermentation in stainless-steel tanks, intended to preserve freshness and the varieties’ bright character.
