The Carricante is grown in Sicily in vineyards managed according to sustainable farming practices.
Vinification
The grapes are harvested when ripeness and acidity reach the desired balance. Traditional white-wine vinification is followed by fermentation in temperature-controlled stainless-steel tanks to retain freshness and the variety’s bright character.
