Vineyard and terroir
The grapes come from two areas of Puglia, the provinces of Brindisi and Lecce, where the climate and soils suit the growing of high-quality grapes and olives. The vineyards follow sustainable farming practices. Cantine Ermes works with a range of terroirs, each with its own microclimate and geologically diverse soils.
Vinification
The grapes are harvested when ripeness and acidity reach the ideal balance. The wine is made by the traditional red winemaking method in temperature-controlled stainless-steel tanks, which preserve its freshness and the bright character of the variety.
