Vineyard and terroir
The Pinot Grigio and Catarratto are grown in Sicilian vineyards managed according to sustainable farming practices. Cantine Ermes members cultivate more than 6,000 ha across the provinces of Trapani, Agrigento and Palermo, encompassing varied microclimates and geologically diverse soils.
Vinification
The grapes are harvested when ripeness and acidity are in balance. Traditional white vinification takes place in temperature-controlled steel tanks to retain freshness and a bright varietal character.
