Vineyard and terroir
In Puglia, the fruit ripens under strong sunlight and high temperatures. Cool winds from the Apennines and Adriatic sea breezes create a Mediterranean microclimate with hot summers and snowy winters. Hills and mountain slopes have marly clay soils rich in sand and limestone, while flatter coastal sites are characterised by gravel and alluvial deposits.
Vinification
After harvest, the grapes are gently crushed and destemmed. Maceration takes place at 26–28 °C, and the wine is filtered before bottling.
