Vineyard and terroir

The estate vineyards lie in the Sambuca di Sicilia area. The vines are warmed by the southern sun and cooled by sea breezes.

Vinification

Once the grapes reach optimal ripeness, the shoots are trimmed and the fruit is left to dry naturally in the hot Sicilian sun, concentrating its sugars. Harvest begins after 15–20 days, when the grapes have lost 15–20% of their weight. At the winery, the grapes are crushed and fermented on their skins to extract tannins, followed by a long maceration.

Ageing

The wine ages in French and American oak barrels for around 12 months.

Tasting profile

Vibrant, rich and smooth, with plum and chocolate flavours, a complex aroma and hints of spice. The palate is smooth and well balanced.

Pairs with grilled meat, grilled vegetables, fish and goat’s cheese.
