Questo vino
Vineyard and terroir
The grapes grow on the Salento peninsula, in Manduria and Sava in the province of Taranto. The vines are 60 to 70 years old and stand in red soils very rich in iron oxides, over a limestone subsoil. The Mediterranean climate helps the grapes ripen evenly, developing sweetness and tannins.
Vinification
The grapes are harvested slightly overripe. After destemming and crushing, they macerate and ferment at controlled temperature for 8–10 days, with the must pumped over periodically. Malolactic fermentation follows.
Ageing
The wine is transferred to first- and second-fill American and French oak barrels, where it ages for 4–5 months.
Tasting profile
An elegant red wine.
