Vineyard and terroir
The vineyards lie between 300 and 600 metres above sea level in the Sambuca di Sicilia area. The dark soil, shaped by the slopes of Mount Etna, is rich in minerals. Abundant sunshine and moderate rainfall give a classic Mediterranean climate, which prevents rot and mould on the grapes. Coastal breezes soften temperature swings and ventilate the vineyards. Only organic grape-growing methods are used, without chemical treatments or herbicides.
Vinification
After harvest the grapes are destemmed and gently pressed to avoid extracting green tannins. Maceration takes place in steel tanks at a controlled 24–26 °C for 8–10 days, with regular pumping over to extract colour.
Ageing
The wine is aged in stainless steel tanks to develop a balanced texture.
Tasting profile
A rich, well-balanced red, made to be simple and approachable.
Serving and pairing
Pairs with grilled meat, game, red meat and aged cheeses.
