Ageing
The wine matures for several months in terracotta amphorae and barriques, then rests for six months in the historic Filtrating Gallery of Impruneta. Hand-carved into stone in the mid-19th century to purify rainwater naturally, the gallery maintains a constant temperature of 14°C and relative humidity of 95% through natural regulation. Research into the conditions established the chosen maturation period.

Villa L’Olmo represents the soul of Diadema and the Giannotti family’s connection to Tuscany. Alberto Giannotti develops the estate’s vision together with his daughters, Giulia and Livia. Winemaker Emiliano Falsini oversees the winemaking.
