Vineyard and terroir
The grapes come from certified organic vineyards in the hills of the municipality of Tollo. The vines are 20–35 years old on average.
Vinification
The harvest date is determined by chemical analysis. After harvest, the grapes are gently pressed and fermented at a controlled temperature in 225-litre barrels of French oak and Austrian acacia.
Ageing
The wine ages in the same 225-litre French oak and Austrian acacia barrels used for fermentation.
