Vineyard and terroir
The grapes come from three vineyards in the communes of Randazzo and Castiglione di Sicilia. The vines are more than 30 years old on average.
Grapes
The wine is made from Grecanico and Carricante.
Vinification
The grapes are harvested by hand, destemmed and lightly crushed. Maceration on the skins lasts approximately three days, and fermentation takes place with native yeasts. No sulfites are added during production, or only a minimal amount is used.
Ageing
The wine ages for 16 months in epoxy-resin tanks ranging from 1,500 to 4,500 L, positioned in the coldest part of the cellar.

Suitable pairings range from fish to white meat.
Label / history
Munjebel Bianco was Frank Cornelissen’s first white wine. It was initially produced as an orange wine, with extended fermentation on the skins. Although Frank appreciated its texture and body, he felt that it lacked the finesse and precision of classic French white wines such as those from the Loire. Beginning with the 2015 vintage, he shortened the skin-contact period and extended the ageing process in pursuit of greater purity and a clearer expression of Etna.
