Vineyard and terroir
The fruit comes from Porcaria, one of the estate’s oldest vineyards, at 640 metres above sea level in Feudo di Mezzo. The site faces north and presents challenges in achieving full ripeness. The vines are more than 60 years old on average.
Vinification
The grapes are harvested by hand, destemmed and gently crushed. Fermentation takes place on the skins for 50 days with native yeasts. No sulphites are added during production, or only a minimal amount is used.
Ageing
The wine matures for 18 months in 1,500–2,500-litre epoxy-resin tanks, followed by a further 18 months in bottle.
