Vineyard and terroir
The grapes are left on the vine for about 25 days after ripening, so that they dry gently and become more concentrated.
Vinification
The wine follows the Appassimento method, which uses slightly dried grapes for a more concentrated flavour. Vinification is traditional, at a controlled temperature.
Ageing
No oak ageing. The wine is bottled young to preserve the natural sweetness of ripe fruit and its soft tannins.
Tasting profile
Deep and juicy, with warm, ripe fruit. The drying of the grapes gives a fuller, rounder taste. Tannins are soft and the character is warm and velvety.
Serving and pairing
Pairs with grilled meat, pasta with tomato sauce, roast duck, aged cheeses, and dishes seasoned with herbs and spices. Its aroma and structure suit rich sauces, spicy notes and hearty dishes.
