Vineyard and terroir
The vineyards are farmed biodynamically without chemical pesticides, herbicides or systemic treatments. Perennial grasses and cover crops are used to support the vineyard ecosystem and soil fertility, and work follows the phases of the Moon.
Vinification
The grapes are sorted by hand and destemmed on racks. Fermentation is exclusively spontaneous, without corrective winemaking practices. The wine undergoes a second fermentation in bottle using fresh must from the same grapes. It is not mechanically filtered, but settles naturally after fermentation.
Ageing
The wine spends 18 months on its lees before disgorgement.
