Organically grown Sangiovese is blended with a small proportion of Syrah.
Vinification
Made by the PetNat method, the wine is bottled with its yeasts midway through fermentation, sealed with caps and moved to a warmer area of the cellar, where spontaneous fermentation resumes in the bottle. The resulting carbon dioxide forms naturally and helps to keep the wine stable without added sulfites. The wine is not disgorged; its sediment remains in the bottle, developing the aroma and enriching the flavour.
