Fiano is a variety that originated in Campania but is now widely grown in Puglia, where it is considered a true local variety.
Vinification
Nico Mangione macerates the Fiano on its skins for around two weeks. This is long enough to soften the aromatic character the grape develops in Puglia, but not so long that it risks losing its varietal identity. His aim is a Puglian white wine that answers the common criticism that local whites lack acidity.
