Vineyard and terroir
The fruit comes from a vineyard of approximately 2 hectares in Trapani province, western Sicily. The 11-year-old vines grow in sandy, limestone-rich soils and are planted at a density of 3,500 vines per hectare.
Vinification
The grapes are usually harvested in the first half of September, then chilled and carefully selected. Whole clusters undergo spontaneous fermentation with natural yeasts in stainless-steel tanks.
Ageing
The wine ages for seven months in stainless steel.
