Vineyard and terroir
The organically farmed vineyards are in Central Puglia, far from the Adriatic Sea, on the Altopiano delle Murge (Murgia) near Sammichele di Bari. They lie at 280 metres above sea level on rocky limestone soils, which give the grapes distinctive acidity and minerality.
Vinification
The grapes are harvested by hand and pressed. Fermentation begins spontaneously without added sulfites. The must remains in stainless-steel tanks for about six months while developing its pink colour. Fresh must is then added to trigger a second fermentation in the can.
