Vineyard and terroir
The three varieties grow in separate vineyards at 360–400 m above sea level, on complex soils rich in different types of rock. Sangiovese comes from Casanova, Cabernet Sauvignon from Casi and Merlot from Moci. The vines were planted in 1990 and 1997 at a density of 5,000 vines per hectare.
Vinification
Merlot is harvested in the final week of September, followed by Sangiovese in mid-October and Cabernet Sauvignon in late October. After destemming and gentle crushing, the grapes undergo alcoholic fermentation and 25 days of maceration, with regular pumping over at a controlled temperature of 26–28 °C.
Ageing
The wine matures for 14 months in 300 L barrels made from Nevers, Tronçais and Allier oak, followed by at least six months in bottle.
