Vineyard and terroir
The grapes grow in the commune of Santa Ninfa in the Belice Valley. The vineyards are at very high elevation on dark, sandy limestone soils of alluvial origin, rich in mineral deposits. The climate is warm and Mediterranean, with abundant sunshine, moderate rainfall and light breezes.
Vinification
The grapes are harvested at optimal ripeness. They macerate at 26 °C for 12–15 days, with daily pump-overs, and ferment in steel vats.
Ageing
The wine matures for four months in stainless-steel tanks.
