Vineyard and terroir
The selected fruit comes from vineyards in the commune of Santa Ninfa, in the heart of the Belice Valley. The vineyards are situated at a very high elevation on dark, mineral-rich clay soils of alluvial origin. The Mediterranean climate is warm, with abundant sunshine and moderate rainfall.
Grapes
The grapes are selected before vinification.
Vinification
The grapes are harvested relatively early to retain freshness and natural acidity. The wine is produced by the Charmat-Martinotti method. During the second fermentation, the base wine ferments with sugar and yeast in pressurized steel tanks.
Tasting profile
The aroma is fruity and floral, while the palate is well balanced.
