Vineyard and terroir
The vineyard lies at 300 m above sea level, with a southwest-facing exposure and a planting density of 5,000 vines per hectare.
Vinification
Harvest takes place in two stages: the first grapes are picked in the first week of September, and the second harvest occurs during the middle ten days of October. The grapes are carefully destemmed, then fermented with skin contact in stainless-steel tanks for 25–30 days at approximately 26 °C.
The traditional Governo all’Uso Toscano method is used, a technique dating to the 1800s. Grapes partially dried on the vine are added to wine that has already fermented, initiating a second fermentation.
Ageing
The wine matures in barriques for six months, followed by another six months in bottle.
