Vineyard and terroir
The vineyards are in the province of Trapani, on Sicily’s western coast by the Tyrrhenian Sea, at 40–150 metres above sea level. The Mediterranean climate brings mild winters, limited rainfall, and very hot, windy summers. The vines grow in well-drained limestone and sandy soils and are managed organically to maintain the natural balance among soil, climate, and vines.
Vinification
The grapes are harvested in late September and gently pressed at the winery. Fermentation takes place under controlled temperatures, with a long maceration.
Ageing
The wine ages for four months in stainless-steel tanks.
