Vineyard and terroir
The grapes grow in Pellegrino’s vineyards in the province of Trapani, at elevations of up to 300 m above sea level. On Sicily’s western coast and bordered by the Tyrrhenian Sea, the province has a Mediterranean climate with mild winters, limited rainfall, and very hot, windy summers. The vines are planted mainly in sandy soils and are farmed exclusively using organic methods intended to preserve the ecological balance of the soil and wider environment.
Vinification
The grapes are harvested by hand in late August and early September. They undergo 6–8 hours of maceration before gentle pressing. The juice ferments in temperature-controlled stainless-steel tanks, after which wine spirit is added.
Ageing
The wine rests in stainless-steel tanks for six months.
Tasting profile
The palate is pleasantly soft.
